Osa’s delicious project

A project aims to create an innovative gastronomic offer, through which Osa’s small entrepreneurs will manage to attract more visitors.

There are 20 participants of the experimentation project called Cooking Labs, carried out by Imagine XYZ. By doing this, they intend to create an autochthonous menu of the area through workshops, where chefs, producers and cooks taste flavors and recipes.

The result will be displayed at a culinary fair in June and will be used by 20 entrepreneurs from Caminos de Osa project.

Bryan Navarro, president of Imagine XYZ, commented that this is an area of ​​great natural and cultural wealth, which can be used.

When Costa Ricans think about Caribbean food, they think of rice and beans and plantitah (ripe banana pie). In Osa, on the contrary, the local gastronomy, like the chopped heart of fan palm or the tepezcuintle is unknown,

declared Navarro.

This project is developed within the framework of the Alcanzando Escala program, which consists of six stages.

The first one ended in early January and dealt with the collection of information on Osa, its traditions and culinary culture.

The second phase is the one that is being executed at the moment, in which experts will experiment with ingredients from the peninsula to define the dishes that will be part of the first menu proposal.

The third one consists of the gastronomic exhibition with the local entrepreneurs and cooks to exchange culinary knowledge and to approve the elaborated dishes.

In the remaining 3 stages, a second dish experimentation will be carried out and a final gastronomic fair will be organized.
